Default double stages

This is the first time I've tried to post anything, hope it works OK. Anyway, I have a question. Why did southern boats have double stages? I've never been able to find an answer to this question. I'm sure there's a logical reason for their use, but it seems to me that a single stage could do anything double stages could, and that they just added more rigging to take care of.
